Keto Strawberry Pie



We tried this pie one time and knew it would be a family favorite. In fact, this may be my favorite Keto Dessert EVER!!!  The best part, it is easy to make and with ingredients I always have on hand.  
One thing to be aware of, you need time for the crust to cool and time for the pie to set in the freezer or refrigerator.  I was so excited, I could not wait.  So we ate it without setting and it was still amazing.  
DIFFICULTY - easy peasy lemon squeezy
TREAT - 6 carbs per slice, save it for special occasion
TRIGGER - so good you could eat the whole thing
WORTH IT - totally worth the carbs and calories

Ingredients
  • 1 cup chopped pecans
  • 2 tbsp butter melted
  • 1 tsp Swerve granulated
  • 8 oz Philadelphia Cream Cheese softened
  • 1 12 cup heavy whipping cream
  • 1 cup strawberries chopped
  • 23 cup Swerve confectioners
  • 1 tsp vanilla extract
Directions
  1. For the Crust:
  2. Preheat oven to 350 degrees. Crush pecans finely.
  3. Add butter and Swerve granular to crushed pecans and mix thoroughly. I added the ingredients to my mini processor and pulsed until all of the ingredients were combined.
  4. Grease a pie pan then add crust mixture.
  5. Grease the back of a spoon and use it to carefully smooth the pecan mixture in the bottom of the pie pan and up the sides.
  6. Bake for 10 minutes and allow to cool.
  7. For the Filling:
  8. In a large bowl, beat the heavy whipping cream until it forms stiff peaks.
  9. In a separate bowl, add one cup chopped strawberries, softened cream cheese, Swerve Confectioners, and vanilla then beat on medium speed until the mixture is smooth and the strawberries begin to break down turning the filling pink.
  10. Add the heavy whipping cream to the strawberry mixture and beat again until smooth.
  11. Pour filling mixture into pecan crust and freeze for 1 to 2 hours before serving so that it sets up. (You may store pie in fridge and pop in the freezer for about an hour or two before serving.)
