Refried Bean Casserole

This is a major favorite of ours for years.  It is also another recipe that I always have the ingredients on hand.  So I can make this up in a hurry.  This is a Kim original.  One day, I needed something for supper and began throwing things in a bowl that I thought would go good together.  It is also good when you add taco meat to it.  You just have to adjust the points.  Next time I make this - I will add a picture. 

Refried Bean Casserole

  • 2 cans fat free Refried Beans
  • 4 cups cooked brown rice  (I use 1 box of walmart brand brown rice)
  • 14 oz fat free shredded cheddar cheese
  • 8 oz fat free sour cream
  • 1 can yellow corn (drained) or 1 1/2 c. frozen corn
  • 1 jar fat free salsa

  1. Preheat oven to 350.
  2. Mix all ingredients together. 
  3. Heat in oven until cheese melts - about 15 minutes.

Serving size:  1 cup
